Wash and rinse potatoes then slice each potato into 3/4 inch cubes
Bring a large pot of water to a boil and add in potatoes and cook for 10 minutes over high heat (keep it boiling)
Strain the potatoes then add them to a bowl and allow them to cool (we added ours to the fridge to speed things up)
Meanwhile mix together yogurt, mayo, mustard, apple cider vinegar, honey, garlic powder and salt and pepper in a small bowl
Once potatoes are cool mix in the dressing and evenly coat the potatoes
Sprinkle the bacon and chives on top, mix again and serve or add to fridge to set and really marinate. We like to make ours ahead of time so the flavors really pop!
