This Dill Pickle Chicken Salad is absolutely delicious! My go-to 10 minute lunch packed with protein and with the flavors we all love in PICKLES!

Yield: Serves 4

Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1/2 cup chopped dill pickles
  • 3 tablespoons shallots, finely chopped
  • 2 tablespoons scallions, green part finely chopped
  • 1/4 cup plain greek yogurt
  • 12 tablespoons mayo
  • 1 tablespoon pickle juice
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried dill
  • Sea salt and black pepper to taste

Instructions

  1. Add the chicken, pickles, shallots, scallions to a large bowl then add in the yogurt, mayo, pickle juice, lemon juice, dried dill and salt and pepper and mix all together
  2. Serve with your desired crackers, bread, bagel or lettuce cups or store in fridge in airtight container.
