Easy and Delicious Paleo Caramel Apples made with a homemade vegan caramel sauce. Such an epic version with lower sugar than the usual candy apples yet still insanely tasty and addicting.

Ingredients

  • 4 granny smith apples, washed and stem taken off
  • 4 extra thick skewers
  • 2 tablespoons grass-fed butter or ghee
  • 1/2 cup maple syrup
  • 2 tbsps tapioca or arrowroot flour (this is needed so the caramel thickens!)
  • Crushed up nuts or chocolate or anything you want!

Instructions

  1. Add each stick to the apple (where the stems are) and set aside. I like to keep the apples in the fridge too so they stay cold and the caramel hardens faster but totally optional
  2. In a small pot, melt the butter then add in the maple syrup and bring to a low boil
  3. Simmer and continue to stir constantly for about 4-6 minutes then add in the tapioca and whisk/mix very well over low heat or turn the heat completely off
  4. Once the mixture is runny but a little thicker, immediately coat each apple in the caramel sauce then sprinkle desired crushed nuts or any toppings
  5. Allow the apples to set for a bit then enjoy!

Notes

*Store leftovers in fridge for 5 days. But these taste best when eaten sooner.
