These Chicken Parmesan Meatballs are the ultimate easy dinner recipe. Made with all gluten-free and grain-free ingredients for an easy 30 minute meal to make.

Yield: Serves 4

Ingredients

Scale
  • 1 lb ground chicken
  • 1/2 cup grated parmesan cheese
  • 1/3 cup almond flour
  • 1 egg
  • Sea salt and black pepper to taste
  • 1/2 teaspoon each dried oregano and parsley
  • 16 ounces pasta sauce of choice
  • Basil leaves and grated parmesan to garnish

Instructions

  1. In a large mixing bowl, combine ground chicken, cheese, flour, egg, spices and mix all together
  2. Form the mixture into small meatballs (about the size of a golf ball)
  3. Heat a large oven-safe skillet with medium heat and oil well
  4. Once oil is hot, add meatballs to skillet and sauté for 3-4 minutes on each side (don’t overcrowd meatballs so you may need to cook in batches depending on skillet size)
  5. Preheat oven to 350 degrees F and pour sauce over meatballs
  6. Transfer the skillet to the oven and bake for 15-20 minutes, until fully cooked through
  7. Remove from oven and add basil on top and extra parmesan cheese! You can serve with any desired sides or veggies

Notes

*Store leftovers in fridge for 5 days and reheat in microwave or pot with sauce
