EASY Pecan Pie Truffles (gluten-free + vegan)

These Pecan Pie Truffles are a DREAM dessert. Such an easy, flavorful and unique recipe for pecan pie lovers who also want a little something chocolatey. So great to snack on and they’re made with gluten-free and vegan ingredients.

Yield: Makes 12 truffles 1x

Ingredients

Scale
  • 2 1/2 cups pecans, finely chopped (for more flavor, toast them but not necessary) i use food processor to chop them
  • 1 cup graham cracker crumbs (gluten-free if needed), I use food processor to crush them up
  • 1 cup coconut sugar
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate, melted

Instructions

  1. In a large bowl, stir together the crushed up pecans, crushed up graham crackers, coconut sugar, maple syrup and vanilla extract and mix to combine
  2. Line a baking sheet with parchment paper
  3. Form mixture into 2-inch balls (about 2 tablespoons per ball) then place onto the baking sheet
  4. Add to freezer for 1 hour to set
  5. Then dip each ball into chocolate then place onto the baking sheet again
  6. Let the truffles set for about 30 minutes in freezer or until firm and enjoy!

Notes

*Store leftovers in fridge for 1 week or freezer for 2 months
