Sheet Pan Tacos are a staple for an easy weeknight dinner that serves everyone and tastes like a fast-food favorite. Made with all gluten-free ingredients and a meal my family requests weekly!

  • Prep Time: 8 mins
  • Cook Time: 25 mins
  • Total Time: 30 mins

Yield: Serves 4-6 1x

Ingredients

Scale
  • 1 pound ground meat of choice (I usually use turkey, chicken or beef)
  • 1 bell pepper, diced (red, orange, yellow or green all work)
  • Small white onion
  • 2 cloves garlic minced
  • 1 cup chunky mild salsa (or use spicy if you want this on the spicier side)
  • 1 cup shredded cheddar, manchego or Mexican-blend cheese
  • 12 6-8 inch gluten-free tortillas

Instructions

  1. Preheat oven to 350 degrees F
  2. In a large 12” skillet over medium heat, cook onion, garlic, pepper and meat (feel free to add in any taco seasonings you want too)
  3. Add the ground meat to a lined plate to absorb any excess fat/oil from the meat
  4. On a 9×13 inch baking sheet, place 6 tortillas across sheet then sprinkle meat mixture
  5. Spread salsa across the meat then sprinkle the cheese on top
  6. Add more tortillas on top to full cover and bake in oven for 25 minutes (I lke to broil for 1 minute or so at the end)
  7. Remove and allow the taco bake to stand for 5 minutes
  8. Serve warm with sour cream, guacamole, lettuce, tomatoes any of those traditional accompaniments!

Notes

*Store leftovers in fridge for 5 days and reheat in microwave or in oven or stovetop in a skillet
