EASY Strawberry Shortcake Truffles

These Strawberry Shortcake Truffles are such an easy and delicious strawberry dessert. Filled with fresh strawberries and graham crackers and coated in white chocolate – these are a must-make.

Yield: 16 truffles 1x

Ingredients

Scale
  • 1 cup fresh strawberries, stems removed
  • 1 cup graham crackers, gluten-free if needed
  • 1/2 teaspoon vanilla extract
  • 1 cup almond flour
  • 1 cup white chocolate chips (vegan if needed)
  • 2 teaspoons coconut oil
  • Freeze-dried strawberries for topping (I love these fruit snack ones!!)

Instructions

  1. In a food processor, add graham crackers and pulse until finely crushed (no chunks left!)
  2. Add in strawberries and pulse until finely diced but not pureed
  3. Add in almond flour and vanilla extract and pulse or mix again until dough is formed
  4. Scoop the filling using a cookie scooper or tablespoon and add to a parchment paper lined baking sheet (should make about 16 truffles!)
  5. Add to freezer for 20-30 minutes to set
  6. Then melt white chocolate in microwave with oil in increment of 30 seconds, stirring after each
  7. Gently dip each truffle into the chocolate, allowing excess to trip off
  8. Sprinkle crushed up strawberry bites and add to freezer to set until firm and enjoy!

Notes

*Store in freezer for 2 months
