Flourless Chocolate Chip Banana Bread Donuts

Ingredients

    Wet ingredients

  • 2 medium bananas, mashed
  • 1/4 cup liquid coconut oil
  • 2 tablespoons maple syrup (can sub honey)
  • 2 eggs at room temperature (haven't tested chia or flax egg)
  • 1 teaspoon vanilla extract
  • 3/4 cup creamy nut butter (code rachL for free shipping on this one)
  • Dry ingredients

  • 1/4 cup almond flour
  • 3 tablespoon coconut flour
  • 1 teaspoon baking powder
  • Mix-in's

  • 1/2 cup dark chocolate chunks or chips (I love breaking up this one)

Directions

  1. Preheat the oven to 350 degrees
  2. In a medium mixing bowl, mix together wet ingredients together with a Kitchen Aid hand mixer (if you don't have one just mix very well with wooden spoon and whisk)
  3. Add in dry ingredients and mix well
  4. Fold in dark chocolate chips
  5. Bake in oven for about 10 minutes or until cooked, I stick a tooth pick in one to see if it is done, the toothpick should come out clean
  6. Let cool for a couple of minutes then remove from donut pan
  7. Enjoy with 5-7 days and store in fridge, you can freeze for longer*
