Hi Rachel! I have been itching to try one of your banana bread recipes and I like these flavors so I gave it a whirl. I opted to turn the batter into muffins because somehow muffins are just more appealing to me than a loaf (maybe it’s those crusty edges…). I also used flax eggs and it worked out perfectly.
I do feel there is a strong peanut butter taste so that is slightly misleading since the bread is simply titled Flourless Oatmeal Raisin Banana Bread. For the so-so peanut butter fans, make sure you use a nut butter you like. Thankfully, I like peanut butter so this was just great. It makes a lovely, filling snack. I’m looking forward to trying more of your recipes.
