These French Toast Roll Ups are such an easy and delicious French Toast recipe and a new way to enjoy a classic breakfast dish any day of the week.

Yield: Serves 2

Ingredients

Scale
  • 4 slices of soft bread, crusts cut off if desired (use gluten-free bread if needed!)
  • Mix-in ideas: jam, peanut butter, chocolate chips, mashed banana, anything!
  • 1/4 cup non-dairy or regular milk
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Butter or oil to grease skillet

Instructions

  1. In a shallow bowl, whisk together the eggs, milk, cinnamon and vanilla extract
  2. Trim the crust from the bread if doing so and roll out one slice out to about 1/8-inch thickness with a rolling pin or wine bottle (ha)
  3. Spread a thin layer of desired toppings (I used jam and peanut butter)
  4. Roll up tightly and repeat with remixing bread slices
  5. Grease a large skillet with butter or oil and then dip each roll (one at a time) into the egg mixture and place into sauce pan
  6. Crisp on the stove for 1-2 minutes per side until golden brown
  7. Remove from skillet and enjoy while warm with maple syrup if desired!

Notes

*Store leftovers in fridge for 5 days
