Gluten-free Birthday Cake Banana Bread Skillet made with all paleo and dairy-free ingredients. This is such an easy 30 minute dessert.

Ingredients

Scale
  • 1 cup of mashed banana (about 23 ripe bananas)
  • ⅓ cup liquid coconut oil
  • ⅓ cup creamy nut or seed butter
  • 3 tablespoons maple syrup or coconut sugar
  • 2 eggs (or sub 2 flax eggs)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 teaspoon baking powder
  • 1.5 cups almond flour (or sub 1 cup oat flour. please don’t use coconut flour!)*
  • Sprinkles on top and mixed in

Instructions

  1. Preheat oven to 350 degrees and grease your 10-inch skillet
  2. In a large bowl, add the mashed banana, oil, nut butter, sugar, eggs and extracts together until combined
  3. Mix in in almond flour and baking powder until smooth with no clumps
  4. Mix in sprinkles then pour batter into skillet and add more sprinkles on top
  5. Bake in oven for 20 minutes then remove and enjoy!

Notes

*Store leftovers in airtight container for 5 days or freezer for 2 months
