Gluten-free Stromboli with Veggies

Gluten-free Stromboli loaded with veggies is one of our favorite weeknight recipes that the whole family loves. Using your favorite pizza dough, sauce, cheese and veggies – so easy to make!

Yield: Serves 4

Ingredients

Scale
  • 1 package pizza dough (I used this boxed mix)
  • 810 ounces marinara sauce of choice
  • 1 cup mozzarella cheese, shredded + more for when cooking
  • 1 cup veggies of choice, chopped (I love broccoli, spinach and zucchini)
  • Olive oil for greasing

Instructions

  1. Preheat oven to 350 degrees
  2. Make pizza dough per instructions on the packaging
  3. Add parchment paper to counter and flour well and add the pizza dough then roll with rolling pin to a large rectangle shape that is about 1/2 inch thick
  4. Spread sauce across then sprinkle cheese and veggies, making sure to leave 1/2 inch border around the edges
  5. Gently roll the stromboli by the longer side and gently lift parchment paper with stromboli on top and add to baking sheet
  6. Drizzle with oil then bake in oven for about 40 minutes, sprinkle cheese on top if desired then cook for another 5 minutes or so
  7. Remove from oven and allow it to cool for a few, slice into even pieces and enjoy! I love dipping in extra sauce

*Store leftovers in fridge for 5 days or freeze leftovers for 2 months
