Healthy Baked Peanut Butter and Jelly Donuts made with vegan and gluten-free ingredients for a deliciously healthy twist on a classic!

Instructions

  1. Preheat oven to 350 degrees and grease a donut pan with coconut oil
  2. Mix together the flax egg, coconut oil, milk and vanilla extract until creamy
  3. Add in the peanut butter and mix again until creamy
  4. Mix in the flour, sugar and baking powder and mix until well combined
  5. Fold in the blueberries or jam and mix again
  6. Fill each donut hole with batter and spread so each is evenly filled
  7. Bake in oven for 12-15 minutes then allow the donuts to cool for about 10 minutes
  8. Top with peanut butter and jam if desired and enjoy!

*Don’t have a donut pan? Turn these into muffins! Baking time may need to be adjusted
