Healthy Banana Bread Oatmeal Breakfast Bars made with all gluten-free, nut-free and vegan ingredients. These are an easy go-to breakfast for the whole family and they are perfect for kids too!

Ingredients

Scale
  • 3 medium spotty bananas
  • 2 flax eggs made with 2 tablespoons ground flax + 5 tablespoons water (or sub 2 pasture-raised eggs)
  • 3 tablespoons melted coconut oil (or sub ghee or butter for dairy version)
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1/2 cup coconut flour**
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degrees and grease an 8×8 baking dish well
  2. Mash the bananas in the large bowl then mix in the flax eggs, oil and vanilla and combine until creamy
  3. Mix in the oats, coconut flour, baking powder and cinnamon until fully combined
  4. Add to baking dish and bake for 20-22 minutes
  5. Slice into 9 bars once cooled and enjoy!

Notes

*Top with creamy nut or seed butter or yogurt if desired

*Store in fridge for 1 week or freezer for longer
