Ingredients

  • 2 large ripe bananas
  • 2 flax eggs (2 tablespoon Garden of Life ground flax + 5 water)
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut oil, melted and cooled (I used Garden of Life)
  • 3/4 cup coconut sugar*
  • 2 cups almond flour*
  • 1/2 cup cacao powder
  • 1 teaspoon baking powder
  • 1/2 cup dark chocolate (code RACHL for free shipping)

Instructions

  1. Preheat oven to 350 degrees and grease a 10-12 inch skillet with oil
  2. In a large bowl, whisk together bananas, eggs, vanilla extract, coconut oil and coconut sugar
  3. Mix in the almond flour, cacao powder and baking powder until smooth
  4. Fold in dark chocolate chips then add batter to skillet and bake in oven for 30-35 minutes (or until toothpick comes out clean)
  5. Dig in and enjoy!

*I haven’t tested other flours or other sugars here

**Store leftovers in fridge for 5 days or freezer for longer
