Homemade Granola Bowls (vegan)

Ingredients

  • Dry ingredients:
  • ½ scoop vanilla protein powder
  • 1½ cups oats
  • ¼ cup almond meal
  • Sprinkle of cinnamon
  • Wet ingredients:
  • 1 chia egg (1 tsp ground chia seeds & 2 tsp warm water)
  • 1/2 cup coconut oil melted and cooled
  • 1/4 cup almond butter, melted
  • 1/4 cup maple syrup
  • Optional: handful of chopped nuts or seeds or raisins

Instructions

  1. Preheat oven to 350 degrees
  2. Line cupcake/muffin tin with liners
  3. Mix ground chia seeds and warm water to create chia egg
  4. Mix together dry ingredients in a medium bowl
  5. Mix together wet ingredients in a medium bowl
  6. Add wet ingredients to dry and mix well
  7. Fill each liner half full and lightly pack mixture into cup, pulling up high on the sides
  8. Bake 16 to 20 minutes.
  9. Remove and let cool completely.
