Ingredients

Salad:

  • 4 cups tuscan kale, finely chopped
  • 2 cups cabbage, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 2 green onions, chopped the green parts only
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup peanuts, chopped
  • 1 1/2 cups rotisserie chicken

Peanut sesame dressing:

Instructions

  1. Assemble the salad by adding ingredients to a bowl and toss
  2. Add dressing ingredients to a small bowl and whisk together
  3. Dress salad with desired amount of dressing and enjoy!

Notes

*Store salad in fridge for 5 days. Dressing stays for about 2 weeks. Add dressing to salad right before serving
