Mini Gluten-free Collagen Granola Bowls for a quick and easy breakfast recipe and they are egg-free, dairy-free and filled with collagen peptides! 

Ingredients

Instructions

  1. Preheat oven to 350 degrees and line a muffin tin with liners
  2. Mix together the flax egg, coconut oil and nut butter and mix until creamy
  3. Add in the oats, almond flour, collagen and cinnamon and mix again
  4. Fill 9 muffin liners half way full then lightly pack mixture into cup, pushing up high on the sides to form the bowl
  5. Bake in the oven for 15-20 minutes then allow the bowls to cool for a bit before adding toppings
  6. I love adding coconut yogurt, fruit, granola and nut butter!

Notes

Bowls will stay good in the fridge for 5 days. You can freeze them for 2 months as long as there are no toppings on them!
