My Favorite Grilled Taco Pizza with Shredded Chicken (dairy-free)

Yield: 1 pizza 1x


  • 1 pizza crust of choice
  • 1 container of Blue Moose of Boulder Green Chile Hummus
  • 1 container of Blue Moose of Boulder Mild Salsa
  • 1/2 onion sautéed
  • 2 tablespoons cilantro
  • 1 pound of chicken tenders or breasts
  • 1 avocado, chopped


  1. Begin by poaching the chicken (note you can also prepare however you prefer as well)
  2. Fill a large pot with water (about 2/3 full) and bring to a boil
  3. Add chicken to the water, cover saucepan and reduce the heat to low
  4. Lightly simmer until the chicken is cooked through (about 15 minutes or so!)
  5. Add chicken to cutting board and shred (it should be soft)
  6. Next heat the grill to medium heat or you can also use stovetop and heat a grill pan or skillet (grease well if needed)
  7. Add hummus to pizza crust and spread evenly (I scoped out almost all of it from container but use desired amount)
  8. Next add onion, salsa and chicken to crust and add to grill for about 8-10 minutes
  9. Add avocado and cilantro on top, slice and enjoy!
