  • 1/4 cup pumpkin puree
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1/2 teaspoon pumpkin pie spice
  • 1 cup oat flour
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Start by mixing the pumpkin puree, peanut butter, maple syrup, and vanilla extract in a medium-sized bowl. You can use a spatula or a hand mixer to ensure everything is well combined. The mixture should be smooth, creamy, and slightly thick.
  2. Once the wet ingredients are well mixed, it’s time to fold in the dry ingredients. Add the pumpkin pie spice and oat flourto the bowl. Stir until everything is well incorporated. The consistency should be thick and somewhat sticky, which is exactly what you want for no-bake bars.
  3. Next, melt chocolate chips in microwave safe bowl (add coconut oil if you want) in microwave in 30 second increments, stirring after each.
  4. Line an 8×8-inch baking pan with parchment paper or lightly grease it with non-stick spray.
  5. Press the mixture evenly into the pan using a spatula or the back of a spoon. Make sure the mixture is compact and even, as this will help the bars hold together when cut.
  6. Pour chocolate on top of the bars then pop the pan into the refrigerator for at least 1-2 hours to allow the bars to firm up. If you’re in a hurry, you can place them in the freezer for about 30 minutes.
  7. Once the bars are firm and set, they’re ready to be sliced and enjoyed.
  8. Once the bars have chilled, remove them from the pan by lifting the parchment paper and placing it on a cutting board. Use a sharp knife to cut the bars into squares or rectangles enjoy!
