These Oatmeal Raisin Cookie Bars are a must try! They’re a twist on oatmeal cookies, so delicious dipped in milk and they’re made with gluten-free and dairy free-friendly ingredients.

Instructions

  1. Preheat oven to 350 degree F and line an 8×8 baking dish with parchment paper and grease well
  2. In a large bowl, combine the eggs, coconut sugar, nut butter, oil and vanilla extract and whisk until combined
  3. Add in oats, flour, cinnamon and baking powder
  4. Fold in raisins and add batter to baking dish
  5. Bake for 18 to 22 minutes, or until top is a bit golden (if you want gooey bars, do around 18 minutes)
  6. Allow the cookie bars to cool and then slice and enjoy! Bars will crumble if they are cut hot!

Notes

*Store in airtight container for 5 days or freezer for 2 months
