One Pot Creamy Rice with Chicken Sausage (gluten-free)

This One Pot Creamy Rice with Chicken Sausage is packed with flavor, protein and is an easy 30 minute meal made with gluten-free ingredients. Such an easy weeknight dinner idea that requires minimal prep.

Ingredients

Scale
  • 4 chicken sausage links (I use Sweet Italian), cut into 1/4 inch quarter-sized rounds
  • Olive oil 
  • 1 1/2 cup basmati rice
  • 4 garlic cloves, minced
  • 1 cup canned full-fat coconut milk
  • 2 cups chicken broth or veggie bone broth
  • Sea salt and black pepper to taste
  • 1/2 teaspoon dried basil
  • 1 cup grated parmesan cheese
  • 2 cups baby spinach, chopped

Instructions

  1. Warm a large pan with oil and add the sausage and cook for about 5-7 minutes
  2. Add the rice and garlic to pan then toast for about a minute (add more oil if needed)
  3. Add the broth, milk and spices and mix all together
  4. Bring mixture to a boil then cover and reduce heat to a simmer and cook for about 15-20 minutes, or until rice is ready
  5. Remove from heat and stir in spinach and cheese and mix all together
  6. Serve while warm!

Notes

*Store in fridge for 3-5 days. Reheat in microwave (add splash of broth if needed)
