One-Skillet Cauliflower Gnocchi with Sausage + Spinach for an easy and healthy dinner that only takes 10 minutes to whip up!

Ingredients

  • 1 tablespoon avocado oil or olive oil
  • 2 sausage links, cut into quarters (I used frozen chicken sausage – you can use a plant-based one too or omit if you prefer)
  • 1 bag of Trader Joe’s Cauliflower Gnocchi
  • 2 cups sauce of choice (marinara, pesto or even vodka sauce is great!)
  • 2 cups baby spinach
  • Fresh parmesan cheese on top

Instructions

  1. Heat a large skillet with oil and add the sausage on top and cook for a couple minutes on medium heat, flipping over to cook on both sides
  2. Coat a little more oil on the pan and add in the gnocchi and cook with sausage for about 3 minutes then flip over and cook for another 3-5 minutes
  3. Lower heat and pour sauce in the pan and mix well (feel free to add more sauce if needed)
  4. Add in the spinach and mix and cook for 1-2 minutes or until wilted
  5. Add fresh parm on top and serve while warm!

Notes

*Store leftovers in fridge and reheat in microwave!
