One-Skillet Greek Chicken with Rice

This Greek Chicken Skillet is an easy, one-skillet meal that is made with chicken breasts or thighs, rice, olives and feta for an easy weeknight dinner recipe.

Ingredients

Scale
  • 1 lb chicken thighs or breast (I used bone-in and skin-on as I prefer this for flavor!)
  • Olive oil
  • 1/2 teaspoon garlic pwoder
  • 1/2 teaspoon dried oregano
  • Juice from 1/2 lemon
  • Sea salt and black pepper to taste
  • 1 shallot, peeled and sliced
  • 1 garlic clove, minced
  • 1 cup basmati rice
  • 2 1/2 cup broth (chicken or veggie)
  • 1 cup pitted kalamata olives and castelvetrano olives (or your favorite olives)
  • 2/3 cup feta cheese crumbles

Instructions

  1. Preheat oven to 375 degrees F
  2. Grease a oven-safe skillet with oil and warm on medium heat
  3. Add chicken to skillet and season with salt, pepper, oregano and garlic powder
  4. Sear fora bout 7-9 minutes, flipping halfway through over medium heat
  5. Remove chicken from skillet then add in shallots and garlic and sauté for 5 minutes
  6. Stir in rice and add in broth and bring to a boil, stir then simmer
  7. Add in the chicken to the skillet then cook in oven for 20 minutes or until liquid is absorbed
  8. Remove skillet from oven and add in olives and feta cheese, drizzle olive oil on top then broil in oven for 1-2 minutes then remove from oven and enjoy warm!

Notes

*Store leftovers in fridge for 5 days and reheat in microwave or in a skillet
