    Is there anything better than a big a$$ chocolate chip BROWNIE COOKIE?!

    Ya, I’m going to go with a big fat no to that question. Especially when it is extra fudgy like this one. A complete combination of a brownie and a cookie in one recipe. And did I mention that it is just one big serving? Sure you could go ham on this yourself, but it usually serves two over here. I eat one half, then save the rest for later (or share with J if he’s lucky).

    This recipe was inspired but my Giant Paleo Chocolate Chip Cookie from a couple years ago. I recently made it again and it was such a hit with you guys. I always know what recipes you enjoy the most when I see how many people are making it themselves and tagging me. This was for sure a winner with the rachLeats community and I’m beyond happy about it. I think you guys will love this Giant Fudgy Chocolate Chip Brownie Cookie just as much.

    The recipe itself is gluten-free, dairy-free and is only sweetened with mashed banana and chocolate chips. No other sugar! Plus I add in some of Vital Protein’s new Hot Cocoa Collagen Latte, which is actually insane. You can make a beverage with it or you can add it into any of your favorite chocolatey recipes like I did with this one.     I think you guys will be the best of friends. In fact, I know you are the best of friends already after eating a dozen of these cookies in two days (but actually).

    I made these super soft and chewy banana bread cookies and they are officially going on the dessert rotation. You know, the list of my go-to recipes when I am craving dessert and want to make something for myself or for a friend (if they’re lucky…). These cookies are super flavorful and have that dreamy banana bread consistency (extra moist – yup!) but still taste and hold up like a chocolate chip cookie.

    They are gluten-free, nut-free and made with just a few simple ingredients that you likely already have on hand if you are a usual baker over here on the blog.

    True life this recipe was fully intended to be a blueberry lemon crumb cake pie bar. But after recipe testing for a couple hours and using up way too many ingredients, I hit the pause button on that idea and went with some cookie dough bars instead.

    And to be honest, I’d rather eat cookie dough bars anytime over some pie bars.. just sayin’ 😉

    These Vegan Blueberry Chocolate Chip Cookie Dough Bars melt in your mouth and pretty much taste like you’re eating raw cookie dough in the center. Except they have a crunchy cookie crust that is absolutely delicious and each bite has a mix of tarty blueberries and melted chocolate – too GOOD.

    I love that these cookie dough bars only dirty up one bowl in the kitchen and they’re ready in just 20 minutes. There are no frills here friends, just some basic baking ingredients and combination of both blueberries and chocolate because it is the most underrated flavor combo in my opinion.     For all my oatmeal cookie lovers out there, we finally have a chewy chocolatey oatmeal cookie that is so easy to make. Almost too easy to the point where I now want to continue to make them daily and it is getting dangerous. They have the most perfect chewy consistency and even have a little crisp on the outside if you bake them a couple extra minutes.

    I don’t think a night goes by that I don’t want milk and cookies after dinner. Seriously though, Jord can attest to my complete addiction and now with breastfeeding my hunger is actually on a whole new level. I’m really trying to fuel my body with extra nutrients and boat loads of food and water every single day to keep me going and give Ezra the wholesome foods he needs too through my milk supply.

    What I use to help boost my milk supply…

    I don’t know many people who would say no to some brownie batter fudge.

    Especially when the fudge is made with only 6 ingredients and has what may be one of the best products I have added to my desserts in a long time.

    Last month you saw that Hu Kitchen launched their new gems and let me just tell you, they are insane. Believe the hype friends. I have been waiting for this product to launch in what feels like FOREVER and they are finally here! My days of chopping up their bars like a crazy person are slowing down. Now we have these new baking gems to use (think chocolate chips but sweetened with organic coconut sugar).

    It’s about time there is a zucchini bread recipe on the blog.

    This isn’t your traditional zucchini bread recipe because of the ingredients and the texture is a bit different. The whole loaf is paleo and I use almond flour and coconut flour making it a bit more dense then the usually fluffy and cakey zucchini bread. It’s so satisfying and the chunks of dark chocolate almonds and pieces of zucchini make it absolutely unreal.

    I use Hu Kitchen’s Dark Chocolate Almond Hunks inside the batter. Yup, that’s right – I chopped up these dreamy chocolatey almonds instead of the usual chocolate bar (don’t worry the chocolate bar is on top!). They add an extra crunch and a little sweet and salty flavor inside! I sprinkle their new Earl Grey Cashew Butter bar on top of the loaf before baking and the melted chocolate and cashew butter together is insane in the best way possible.

    There is something about baking cookies that have butter in them.

    Whenever I bite into a cookie that has butter in it, I know there is without even seeing the ingredient list. It adds the best flavor and texture to cookies that truly is unlike baking with anything else.

    I’d be lying if I said that I didn’t go through the whole “don’t eat butter, it’s bad for you” phase. It happened a few years ago when I was beyond confused on what I “should” and “shouldn’t” eat. Like there was supposed to be a rule book to go along with it. Spoiler alert: there is no rule book when it comes to eating. Eat what you want and what makes you feel good. And more often than not for me, that’s enjoying a good old buttah-filled COOKIE.

    Browned butter is a baking game changer friends.

    I don’t just use any butter though. I am a bit biased in that department and always have Vital Farm’s Pasture-Raised Butter on hand. There are boxes and boxes of it in my freezer but that is how much we use it. I like to keep a mix of Vital Farm’s Sea Salt and Unsalted varieties on hand, but usually baking with the Sea Salt one is my go-to. Especially when it comes to baking with chocolate. It gives it that touch of salty flavor with the sweet taste that I love with my cookies.

    I also use Vital Farm’s Pasture-Raised Eggs in this recipe, but you guys already know my love affair for their products. We have made everything from that big mama Cinnamon Roll Skillet to Blueberry Cinnamon Rolls and more on the blog.     A couple years ago I shared my Sea Salt Dark Chocolate Cookie Dough Crack Bars. Since then they have become one of the most popular recipes on the blog. And they’re always a crowd pleaser when I make them for friends and family!

    I have been meaning to make a few changes to the original recipe to help them stay together a bit longer (aka not melt). And I also wanted to make a nut-free option for those that have a nut allergy or just prefer using grain-based flours instead. I know nut-based flours tend to get really pricey for anyone on a budget and I want to make sure al of my recipes are feasible for anyone to make.

    With that being said.. allow me to introduce to you “The Best Ever Dark Chocolate Cookie Dough Bars”.

    Made with simple and healthy ingredients that you guys likely already have on hand in your pantry.

    I combine a mix of sunflower butter and creamy tahini for the usual nut butter addition in a recipe. This helps make the cookie dough base extra “doughy” and mixed with Garden of Life’s Organic Extra Virgin Coconut Oil.

    For the flours and dry ingredients, I use gluten-free oat flour and Garden of Life’s Organic Ground Flaxseed and we use some coconut sugar for the sweetness. It’s of course optional to use coconut sugar if you’d prefer to keep things lower in sugar.  Continue Reading

    Hope no one is sick of carrot cake recipes yet because these new Chocolate Chunk Oatmeal Cookie Carrot Cake Bars are officially one of my new favorite recipes to make on the blog. Ya baby – I said it!

    They are lightly sweetened (just a little maple syrup in the batter), gluten-free, dairy-free and have zero refined sugar in them. Plus we use a mix of almond flour, rolled oats, oat flour for the flours here. I love doing a mix of both almond and oat for this because it makes them a bit more filling and the consistency is on point. Sometimes I find that baking with only grain-free flours leave the consistency a bit too moist, so adding oats really helps!

    These bars are almost like an oatmeal cookie or oatmeal bake you’d enjoy in the morning. I personally liked eating these for breakfast more than dessert and paired them with yogurt, nut butter and fresh fruit! You can also freeze them too if you want to save any for later, but that likely won’t happen once you try these 😉

    I used Hu Kitchen’s dark chocolate bar and cut it into chunks for the chocolatey sweetness here. Slice up one or two (I prefer two, duh!) and mix some in the batter and then sprinkle some on top for that extra chocolatey goodness. Continue Reading
