Quick and Easy Gluten-free Pancake for One! Made with just a few healthy ingredients and this insanely good giant pancake is ready in under 10 minutes.

Ingredients

  • 3/4 cup gluten-free oat flour (gf or regular all-purpose flour works too! I love using this flour – code RACHL for 15% off)
  • 1 teaspoon baking powder
  • 2/3 cup non-dairy milk
  • 1/2 teaspoon cinnamon
  • 1 scoop collagen (I used this one – code RACHL for 20% this collagen – you can omit if you prefer none)
  • Mix-in or stuffing ideas: Mashed banana + chocolate chips for center (I used these – code RACHL for free shipping)
  • Maple syrup for topping

Instructions

  1. In a medium bowl, mix together flour, baking powder, milk, cinnamon and collagen until smooth
  2. Heat a medium skillet and grease with a little oil, butter or ghee
  3. Scoop about 3/4 of the batter onto the the skillet and spread into desired pancake size
  4. Add the mashed banana on top in center and chocolate chips then pour rest of batter on top and spread
  5. Cook on medium/medium-low heat for about 3-5 minutes and when the bottom looks a bit golden, gently flip and cook for another 3-5 minutes on low heat
  6. Remove from skillet, add any desired toppings and enjoy!

Notes

*You can make these and store them in freezer too!
