This Harvest Tuna Salad Melt is one of my go-to fall lunch ideas made a delicious harvest tuna salad and added to sourdough bread with cheddar cheese. Such a flavorful and satisfying sandwich.

Yield: 3 to 4 sandwiches 1x

Ingredients

Tuna salad:

  • 10-ounce tuna skipjack tuna or albacore tuna
  • 1/2 medium apple, seeded and diced
  • 1/3 cup plain greek yogurt
  • 1/2 teaspoon fresh lemon juice
  • 1/4 cup chopped walnuts or pecans, toasted
  • Sea salt and black pepper to taste

Sandwiches:

  • 6 large slices of bread or 8 smaller (I did fresh sourdough)
  • 5 ounces grated cheddar cheese
  • About 2 tablespoons unsalted butter

Instructions

  1. First drain the tuna. I open the lid and press it down firmly over the tuna to drain off as much liquid from the tuna as I can
  2. Combine the ingredients for tuna salad in a large mixing bowl and set aside
  3. Butter one side of each slice of bread then flip them over
  4. Top with cheddar cheese and scoop of tuna salad
  5. Top with second slice of bread, butter-side-up
  6. Warm a large skillet and add sandwich to skillet and cook over medium heat on both sides for about 3 to 5 minutes each (the cheese should be melted)
  7. Remove from skillet, slice and enjoy!

Notes

*Store leftovers in fridge for 3 days. I reheat in skillet or oven!
