    I have a feeling you guys are going to be obsessed with these cookies.

    In fact, I can confidentially say that you will be obsessed with them. I’m not sure what took me this long to combine a sugar cookie type recipe with a chocolate chip cookie recipe, but I’m happy these worlds finally collided.

    Paleo Pumpkin Chocolate Fudge Cookies

    So does anyone remember those Dark Chocolate Avocado Cookies from a few years ago?!? They 100% inspired this new recipe.

    These paleo cookies taste like the fudgiest brownies in cookie form.

    They are extra fudgey and chocolatey and so so good. You also wouldn’t ever expect there to be pumpkin in there. I definitely didn’t set the bar high for these cookie when I put them in the oven. The dough looked a little too liquidy despite adding more flour. But next thing you know these amazeball cookies came hot out of the oven. And they were ready to be devoured.

    What I love about these paleo cookies is how simple they are to make. You only need about 7 ingredients to whip them up and they are relatively low in sugar since the whole batch just has a little coconut sugar to sweeten them.     I find that these cookies taste best fresh out of the oven or cold in the fridge or freezer. But I am also one of those weirdos who loves eating desserts extra cold or just out of the oven. I took one of these cookies off the tray so quickly that I burned my hand (oops).

    Dipped in some nut or coconut milk, you are golden! They have a little extra chewiness to the texture too. SO good you guys!!

    There are so many things I love about these bars, I don’t know where to begin.

    For starters, it’s made with all vegan, gluten-free and nut-free ingredients. And you only need 6 ingredients to whip them up.

    These oatmeal bars combine two of my personal favorites: banana bread AND oatmeal.     I wanted to name these “The best f!cking fudge s’mores bars in the whole entire world” but I figured that was a little aggressive for most…

    These bars. Where do I even begin?

    All you need is a passion and obsession for s’mores like myself and 6 ingredients to make these dark chocolate s’mores bars.

    These s’mores bars are are gluten-free, nut-free and SO easy to make.

    The only thing I am even sorry about when it comes to them is not making them in June for the summer kickoff. It is safe to say I will be making these all year around now because they are straight up one of my most favorite desserts I have made yet.

    A simple graham cracker and coconut oil crust topped with a Manuka honey-sweetened chocolate ganache with some marshmallows on top. That is the elegant way of describing these s’mores bars.

    Make them and bring them to your labor day weekend festivities. Make them in October for Halloween. Bring them to Thanksgiving, do whatever your heart desires with these.

    My favorite part of the bar is is the chocolate fudge center. It is the easiest homemade chocolate ganache that hardens a bit in the freezer when it sets then when you broil the bars and enjoy after, it melts just a bit and – UGH too good. Plus all you need for the ganache is a non-dairy milk, chocolate and some Wedderspoon Organic Manuka honey. Hands down the best honey in the game. It’s sourced responsibly, tastes amazing and little bit goes a long way. You can’t go wrong. It also adds a bit of stickiness to the chocolate layer, which we want to help the bars stick well with the crust and mallows. Continue Reading

    I think the cool kids call these “slutty brownies” but for one I am not cool and two my mom wold 100% have something to say if I had a recipe with “slut” in it – ha!

    So we’re going with The Best Chocolate Chip Cookie Stuffed Brownies and I am feeling really good about these bad boys. They are gluten-free and vegan and made with such easy ingredients you will see.

    What I also love about these is that they sound 100x more gluttonous than they actually are. When you think about adding cookies into brownies, most would say “whoa that’s crazy” but when you add a thin layer of these Crunchy Chocolate Chips Cookies from Simple Mills on the brownie batter, you’ll see they really aren’t as crazy as you think.

    For starters the Simple Mills cookies are made with a nut and seed blend, organic coconut sugar, organic coconut oil and all ingredients you would find in your own kitchen. How awesome is that? But I am sure most of you already know this since I talk about Simple Mills and all of their goodies often.     A few years ago, I shared a Double Chocolate Chip Banana Bread here on the blog. Not only was the recipe mediocre but the photos were pretty unappetizing if you ask me! I then found myself scrolling and looking at other older recipes with an urge to tweak them.

    This recipe is the first of many I’m going to be recreating from the blog. And at this point we’re talking 4+ years ago some of these are from, and I like to think I have brushed up on a few more kitchen and photo skills since then 😉

    Ok ok but this healthy Double Chocolate Chip Banana Bread..

    This bread is a mix of devil’s food cake and banana bread in my opinion. The consistency is extra *moist* and has the best chocolatey flavor to it. Because I added in melted chocolate to the batter plus some cacao powder and chocolate chips. Such a game changer!

    Then there’s the addition of Vital Proteins Hot Cocoa Collagen Latte. Hands down one of my favorite products they have ever created. It is amazing to add just to your smoothies or warmed milk etc. for a drink of sorts but I love to bake with it.

    But what does collagen even do to a recipe? Adding collagen to a recipe doesn’t change the consistency at all but it does add some extra nutritional benefits and protein, which is always a plus if you ask me.     An oatmeal bake for two? Yes please!

    I am all about the mini recipes these days. Mini pretty much means smaller serving of a recipe around here.

    I know many of you guys are always looking for recipes to make that don’t create a huge batch of something and I totally get it! The more food I have prepped at times the better, but there are times Jord and I don’t always want the same thing to eat and I don’t want to make a huge baked oatmeal or batch of cookies if he isn’t going to eat it too!

    That’s what brings us to this Mini Chocolate Chip Banana Bread Oatmeal Bake. One of the easiest breakfast recipes ever since you pretty much mix a few ingredients together in a bowl, pour into a small cast iron skillet and you’re good to go.

    So what do you need for this mini healthy oatmeal bake?

    I made this oatmeal bake, which made two servings for me. I used my mini cast iron skillet and added in some of my Majka lactation booster for my milk supply. Using the booster is optional in this recipe but for any of my nursing mamas or mama’s to be, I highly recommend trying out Majka’s products. They have helped support my milk supply tremendously over the past few months. I love keeping their bites on hand for snacking (I eat about 2 per day) and their booster to add into recipes.     Is there anything better than a big a$$ chocolate chip BROWNIE COOKIE?!

    Ya, I’m going to go with a big fat no to that question. Especially when it is extra fudgy like this one. A complete combination of a brownie and a cookie in one recipe. And did I mention that it is just one big serving? Sure you could go ham on this yourself, but it usually serves two over here. I eat one half, then save the rest for later (or share with J if he’s lucky).

    This recipe was inspired but my Giant Paleo Chocolate Chip Cookie from a couple years ago. I recently made it again and it was such a hit with you guys. I always know what recipes you enjoy the most when I see how many people are making it themselves and tagging me. This was for sure a winner with the rachLeats community and I’m beyond happy about it. I think you guys will love this Giant Fudgy Chocolate Chip Brownie Cookie just as much.

    The recipe itself is gluten-free, dairy-free and is only sweetened with mashed banana and chocolate chips. No other sugar!     I think you guys will be the best of friends. In fact, I know you are the best of friends already after eating a dozen of these cookies in two days (but actually).

    I made these super soft and chewy banana bread cookies and they are officially going on the dessert rotation. You know, the list of my go-to recipes when I am craving dessert and want to make something for myself or for a friend (if they’re lucky…). These cookies are super flavorful and have that dreamy banana bread consistency (extra moist – yup!) but still taste and hold up like a chocolate chip cookie.

    They are gluten-free, nut-free and made with just a few simple ingredients that you likely already have on hand if you are a usual baker over here on the blog.

    True life this recipe was fully intended to be a blueberry lemon crumb cake pie bar. But after recipe testing for a couple hours and using up way too many ingredients, I hit the pause button on that idea and went with some cookie dough bars instead.

    And to be honest, I’d rather eat cookie dough bars anytime over some pie bars.. just sayin’ 😉

    You’d never guess these cookie dough bars are actually healthy…

    These Vegan Blueberry Chocolate Chip Cookie Dough Bars melt in your mouth and pretty much taste like you’re eating raw cookie dough in the center. Except they have a crunchy cookie crust that is absolutely delicious and each bite has a mix of tarty blueberries and melted chocolate – too GOOD.

    I love that these cookie dough bars only dirty up one bowl in the kitchen and they’re ready in just 20 minutes. There are no frills here friends, just some basic baking ingredients and combination of both blueberries and chocolate because it is the most underrated flavor combo in my opinion.
