    My apologies for taking 4 years to share a chocolate peanut butter BANANA MUFFIN!

    But they’re here and they are easy. They are healthy and these muffins make the perfect breakfast or snack recipe.

    I actually baked this on a total whim a month ago when I went to make my Bakery-Style Banana Spice Muffins and realized I didn’t have all of the ingredients I needed to make them. This is usually how I end up creating many of my recipes actually. I go to bake one from the blog, don’t have the goods and am too lazy to get more ingredients.

    I love that these healthy muffins are made with just 7 key ingredients and they have just the right ratio from moist to cake.

    These muffins also combine 3 of the best flavors in the world into one recipe, so there isn’t really much not to love. We have our banana bread, peanut butter and some dark chocolate.

    December is fully dedicated to making an insane amount of cookies to bake with you guys.

    Starting with these Gluten-free Chocolate Chip Monster Cookies that are so good that Ezra’s nanny’s grandchildren, my family and my friends have been requesting them over and over and over again.

    To be honest, I would refer to these as some sort of kitchen sink or M&M cookie. But after polling my Instagram community about what kind of cookies you guys are craving, everyone said “monster cookies”.  So whatever you want to call them is cool with me. All that matters is they taste kick a$$ and have the most epic line up of flavors.

    These healthier monster cookies are going to be one of those recipes I bake for Ezra and his friends when they are over. Not to mention, they are so simple and easy to make too.

    You only need 8 ingredients and 30 minutes to whip these healthier Gluten-free Monster Cookies up.

    You will want to stock up on my beloved If You Care baking sheets for all of your baking/cooking needs this holiday season. And really any season if you ask me.

    I have been going through their baking sheets and sandwich bags like this is no tomorrow. The sheets help prevent the cookies from sticking. This cookie dough is a little sticky so you will definitely want to line your tray with something. Then I use the sandwich bags when I gift these cookies to friends and family.

    Full disclosure here, this was fully intended to be a pecan pie recipe.

    But then when I went to the grocery store to get all of the ingredients, I really just wasn’t craving pecan pie (please don’t hate me!). I am not a huge pecan pie gal and honestly when I make recipes that I’m not genuinely going to enjoy, I’m just not into it. 99% of what I make and share with you guys comes from things I have been itching for.

    Like these homemade triple layer Paleo Salted Caramel Chocolate Chip Cookie Bars

    Just saying the name of these bars gets me all tingly and excited. As soon as you try some and have them, you won’t think I am crazy anymore! They are absolutely insane.

    Did I mention there are three layers involved? One being a salted caramel spread that is made with just 4 ingredients and no refined sugars or creepy ingredients. We will get to that soon but the caramel being sandwiched between two cookie cakes is somewhat orgasmic. It gets all melted and delicious in the oven and combined with the sea salt on top and dark chocolate – WOW.

    I baked these caramel cookie bars in one of my If You Care Cake & Pie Pans. No annoying baking dish to clean after and I was able to easily transport this dessert to my family’s dinner to eat together. Saved me an extra step and time in the kitchen.

    So does anyone remember those Dark Chocolate Avocado Cookies from a few years ago?!? They 100% inspired this new recipe.

    These paleo cookies taste like the fudgiest brownies in cookie form.

    They are extra fudgey and chocolatey and so so good. You also wouldn’t ever expect there to be pumpkin in there. I definitely didn’t set the bar high for these cookie when I put them in the oven. The dough looked a little too liquidy despite adding more flour. But next thing you know these amazeball cookies came hot out of the oven. And they were ready to be devoured.

    What I love about these paleo cookies is how simple they are to make. You only need about 7 ingredients to whip them up and they are relatively low in sugar since the whole batch just has a little coconut sugar to sweeten them.     I find that these cookies taste best fresh out of the oven or cold in the fridge or freezer. But I am also one of those weirdos who loves eating desserts extra cold or just out of the oven. I took one of these cookies off the tray so quickly that I burned my hand (oops).

    Dipped in some nut or coconut milk, you are golden! They have a little extra chewiness to the texture too. SO good you guys!!

    I wanted to name these “The best f!cking fudge s’mores bars in the whole entire world” but I figured that was a little aggressive for most…

    These bars. Where do I even begin?

    All you need is a passion and obsession for s’mores like myself and 6 ingredients to make these dark chocolate s’mores bars.

    These s’mores bars are are gluten-free, nut-free and SO easy to make.

    The only thing I am even sorry about when it comes to them is not making them in June for the summer kickoff. It is safe to say I will be making these all year around now because they are straight up one of my most favorite desserts I have made yet.

    A simple graham cracker and coconut oil crust topped with a Manuka honey-sweetened chocolate ganache with some marshmallows on top. That is the elegant way of describing these s’mores bars.

    Make them and bring them to your labor day weekend festivities. Make them in October for Halloween. Bring them to Thanksgiving, do whatever your heart desires with these.

    My favorite part of the bar is is the chocolate fudge center. It is the easiest homemade chocolate ganache that hardens a bit in the freezer when it sets then when you broil the bars and enjoy after, it melts just a bit and – UGH too good. Plus all you need for the ganache is a non-dairy milk, chocolate and some Wedderspoon Organic Manuka honey. Hands down the best honey in the game. It’s sourced responsibly, tastes amazing and little bit goes a long way. You can’t go wrong. It also adds a bit of stickiness to the chocolate layer, which we want to help the bars stick well with the crust and mallows. Continue Reading

    I think the cool kids call these “slutty brownies” but for one I am not cool and two my mom wold 100% have something to say if I had a recipe with “slut” in it – ha!

    So we’re going with The Best Chocolate Chip Cookie Stuffed Brownies and I am feeling really good about these bad boys. They are gluten-free and vegan and made with such easy ingredients you will see.

    What I also love about these is that they sound 100x more gluttonous than they actually are. When you think about adding cookies into brownies, most would say “whoa that’s crazy” but when you add a thin layer of these Crunchy Chocolate Chips Cookies from Simple Mills on the brownie batter, you’ll see they really aren’t as crazy as you think.

    For starters the Simple Mills cookies are made with a nut and seed blend, organic coconut sugar, organic coconut oil and all ingredients you would find in your own kitchen. How awesome is that? But I am sure most of you already know this since I talk about Simple Mills and all of their goodies often.     A few years ago, I shared a Double Chocolate Chip Banana Bread here on the blog. Not only was the recipe mediocre but the photos were pretty unappetizing if you ask me! I then found myself scrolling and looking at other older recipes with an urge to tweak them.

    This recipe is the first of many I’m going to be recreating from the blog. And at this point we’re talking 4+ years ago some of these are from, and I like to think I have brushed up on a few more kitchen and photo skills since then 😉

    Ok ok but this healthy Double Chocolate Chip Banana Bread..

    This bread is a mix of devil’s food cake and banana bread in my opinion. The consistency is extra *moist* and has the best chocolatey flavor to it. Because I added in melted chocolate to the batter plus some cacao powder and chocolate chips. Such a game changer!

    Then there’s the addition of Vital Proteins Hot Cocoa Collagen Latte. Hands down one of my favorite products they have ever created. It is amazing to add just to your smoothies or warmed milk etc. for a drink of sorts but I love to bake with it.

    But what does collagen even do to a recipe? Adding collagen to a recipe doesn’t change the consistency at all but it does add some extra nutritional benefits and protein, which is always a plus if you ask me. Especially when you crave sweets and banana bread 24/7. I need to get some protein in too 😉 Continue Reading
