Ingredients

For the green tahini sauce:

  • 1/2 cup tahini
  • 1/2 cup chopped flat-leaf parsley leaves
  • 3 garlic cloves, crushed
  • 3 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/3 cup water + more as needed

For the stick beef:

  • 1lb ground beef
  • 4 garlic cloves, crushed
  • 1 teaspoon cinnamon
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon sumac
  • 1 teaspoon salt
  • 2 tablespoons pomegranate molasses

To serve:

  • 4 tablespoons pomegranate seeds
  • 1/4 cup chopped cucumbers
  • 2 tablespoons chopped mint
  • 2 tablespoons chopped flat-leaf parsley
  • 1/4 cup feta cheese, crumbled
  • Pita chips

Instructions

First make the green tahini sauce:

  1. Add tahini, parsley leaves, garlic cloves, lemon juice, salt and water into the bowl of your food processor or blender.
  2. Blend until a drizzle-able sauce forms and set aside.

Make the sticky beef:

  1. Drizzle some olive oil in a large pan over low heat, then add the garlic, cumin, coriander, cinnamon, smoked paprika, chilli, sumac and salt.
  2. Cook the spices, stirring, for 1 minute just until they start to smell fragrant.
  3. Add the ground beef – break it up with your wooden spoon or spatula, stir it through the garlic and spices and then leave it for a couple of minutes without touching it.
  4. Stir the beef and add pomegranate molasses and stir it through the mince. Keep cooking it for another five minutes until cooked through, then take the pan off the heat and get ready to assemble.

Assemble and serve:

  1. Serve as one big sharing plate or you can make individual portions if you prefer! Pile the pita chips in a circle on a large plate, then load on the sticky beef mince.
  2. Drizzle of the green tahini sauce, then scatter over the cucumber, mint, parsley, feta, pomegranate seeds and enjoy!
