Sticky Toffee Apple Cake (gluten-free)

This Sticky Toffee Apple Cake is truly one of the most delicious fall desserts to try! It is ready in 30 minutes, made with gluten-free and nut-free ingredients and the sticky toffee sauce on top is not to be missed.

Ingredients

Cake:

  • 2 large eggs
  • 3/4 cup coconut sugar
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 3/4 cup gluten-free all purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3 tablespoons black molasses
  • 2 tablespoons milk
  • 1 apple cut up/peeled 

Sticky toffee sauce:

  • 1/2 cup coconut sugar
  • 1 tbsp black molasses
  • 1 1/4 cup heavy cream
  • 1/2 cup butter 

To serve:

  • Vanilla ice cream 

Instructions

For the cake:

  1. Preheat your oven to 350 degrees F and grease an 7 x 11 baking dish (or similar size)
  2. In a large bowl, cream together eggs, coconut sugar, butter and vanilla until combined (I used hand mixer)
  3. Mix in the flour, spices, baking powder, baking soda and molasses until combined
  4. Pour the milk into the bowl and mix (it will be thick and sticky!)
  5. Fold in the apple pieces
  6. Pour your mixture into a greased dish
  7. Pop into the oven for about 25-28 minutes
  8. Remove from the oven and allow to cool slightly in the dish

To make your sauce:

  1. While the cake is in the oven, you can make your sauce. Add all your ingredients into a small saucepan, allowing the butter to melt and the sugar to dissolve.
  2. Keep stirring and bring to the boil and stir for a few minutes more before removing from the heat. The sticky toffee sauce will thicken a bit as it cools

To serve:

  1. Cut your cake into squares as big as you like (I like to make sure the cake is warm still!)
  2. Top with a scoop of vanilla ice cream, if using
  3. Pour a little of the hot, sticky toffee sauce over slice of the cake
