How to Make Street Corn Smash Burger Tacos

Make the Street Corn Mix

  1. In a large bowl, mix together the corn, black beans, cherry tomatoes, Greek yogurt (or mayo), cheese, cilantro, lime juice, garlic, chili powder, and salt.

  2. Taste and adjust seasoning as needed. Set aside while you cook the burgers.

Prep the Beef

  1. In a medium bowl, mix the ground beef with taco seasoning, salt, and black pepper until just combined.

  2. Place a tortilla on the griddle, then put a beef ball directly on top of it.

  3. Using a heavy spatula or burger press, smash the beef into a thin layer covering most of the tortilla. (Think crispy edges, not perfect circles!)

  4. Cook for 2–3 minutes until the beef is browned and crispy.

  5. Flip the tortilla + beef carefully, then immediately top the burger side with a slice of cheddar. Cook another 1–2 minutes until the cheese melts and the tortilla is golden.

In a Cast Iron Skillet:

  1. Preheat the skillet over medium-high heat with a drizzle of oil.

  2. Add the tortilla, then place a beef ball on top. Smash it thin with a spatula.

  3. Cook until crispy on the bottom (2–3 minutes), then flip.

  4. Top with cheese and cook until the tortilla is golden and slightly crisp.

Assemble the Tacos

  1. Top each smash burger taco with shredded lettuce.

  2. Spoon on a generous scoop of the street corn mixture.
