Ingredients

Scale
  • 1 9.5 ounce package soba noodles (can sub any grain you’d prefer)
  • 1 cup kale (or greens of choice)
  • 1 tablespoon avocado oil
  • 1/2 lemon
  • 3 tablespoons scallions, chopped
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 5 ounce can Safe Catch Foods Tuna
  • 2 tablespoons mayo of choice
  • Salt & pepper to taste
  • Toasted seeds (I used pumpkin)

Instructions

  1. Cook soba noodles according to package
  2. Strain once ready and rinse in cold water to prevent sticking
  3. In a large bowl, massage kale with avocado oil and lemon juice
  4. In a small bowl, mix together tuna and mayo and mix well
  5. Assemble bowls by adding soba noodles, kale, scallions, cucumber, avocado, tuna and seeds to each
  6. Enjoy!
  7. *Can be made up to a few days in advanced but don’t add avocado until ready to eat!
