The Best Crispy Chicken Thighs (no grill needed)

The Best Crispy Chicken Thighs recipe and method that doesn’t require a grill. It is our go-to way to cook chicken all year around and it always turns out and so flavorful.

Yield: Makes about 4 chicken thighs 1x


  • 1 lb chicken thighs (we like bone-in skin on!)
  • Olive oil
  • 1 teaspoon each oregano, basil, onion powder, garlic powder, salt and pepper
  • 1/2 lemon


  1. Heat cast iron skillet on medium/high heat and preheat to 400 degrees
  2. Add chicken to a bowl and drizzle olive oil on top
  3. Mix together the spices and lemon juice in a bowl then pour on top of the chicken to evenly coat
  4. Place chicken skin side down on skillet to cook 1-2 minutes
  5. Flip and cook on the other side for 1-2 minutes
  6. Transfer to oven and cook for 30 minutes or until ready
  7. Enjoy while warm! I especially love snacking on the skin too
