Instructions
Preheat oven to 425 degrees
Warm a large skillet over medium heat and add oil
Sauté the onion over medium heat for about 5 minutes or until it starts to golden a bit
Add in the meat and seasonings and mix well so everything is evenly combined
Cook on medium heat for about 5-7 minutes or until meat is cooked fully through then add in the salsa
Warm the tortillas in microwave for about 30 seconds so they are pliable then lightly grease them
Lay each tortilla flat onto the baking sheet and add a spoonful of cooked meat to half the tortilla, sprinkle some cheese if desired then gently fold tortilla on top if you’d like (or you can cook open faced too – when I fold mine I usually wrap them in foil to help them stay in form!)
Bake in oven for 8 minutes then gently flip and bake for another 5 minutes or so (I like to spray mine on top with oil so they get crispy)
