The Best Ever White Chicken Chili Recipe made with all gluten-free ingredients. Such an easy and delicious healthy chili recipe and it is made in one pot and takes minimal effort to make.


  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 lb ground chicken
  • 2025 ounces chicken bone broth
  • 4 ounces diced green chiles
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon chili powder
  • Sea salt and black pepper to taste
  • 1 15-ounce can corn
  • 1 15-ounce can cannelleni beans
  • Cilantro, cheese and chips for topping/serving


  1. Heat a large pot with the oil, garlic and onion and cook over medium heat for 5 minutes or so
  2. Add the ground chicken and break up with a fork so it cooks in smaller pieces
  3. Cook the chicken over medium heat for about 5-7 minutes (or until there’s no pink)
  4. Add in broth, chiles and spices and stir together and bring to a boil
  5. Lower to a a simmer then add in corn and beans and allow the chili to simmer for about 15 more minutes then serve while warm
  6. I add some chips, cheese and cilantro to mine! I love these organic “frito” ones


*Store leftovers in fridge for 5 days or freezer for a couple months. I reheat on stovetop or microwave.
