The Best Gluten-free Schnitzel Recipe made with only 6 ingredients. This is an easy paleo oven-baked healthy chicken schnitzel recipe.

Yield: Serves 2-3 1x

Ingredients

Scale
  • 2 large chicken breasts (about 1/2 lb chicken)
  • 1 egg
  • 1.5 tablespoons tapioca flour or arrowroot flour
  • Sea salt and black pepper to taste
  • 1/2 cup crushed up grain-free crackers (about 1 cup crackers)
  • 1/2 cup almond flour

Instructions

  1. Preheat oven to 400 degrees
  2. Grease a small baking dish and add in the crushed up crackers and almond flour and mix
  3. Toast in the oven for 5 minutes then remove and set aside
  4. While it toasts, pound the chicken down so it is about 1/2 inch in thickness
  5. In a shallow bowl, whisk together egg, tapioca flour and sea salt and pepper
  6. Dip a piece of chicken in the egg mixture and evenly coat then add into baking dish with the toasted breadcrumbs and evenly coat in each side
  7. repeat for the next piece of chicken then bake in the oven for about 15 minutes or until chicken is fully cooked
  8. Remove from oven and serve with desired sides

Notes

*Store leftovers in fridge for 5 days. Reheat on stovetop for extra crispness. I also love serving this cold on top of a salad
