Grease a large pot with a little oil then add the onions and begin to cook over medium heat
Let them cook for about 10 minutes or so, until they caramelize
Add in garlic and mix and let it cook for another 10 minutes or so and lower the heat as it cooks
Add in the red wine to deglaze the bottom of the pan (you may need more than 1/2 cup)
Next add in broth you are using and bring to a boil then simmer and cook for another 30 minutes or so until soup thickens
Spoon the soup into 2 small ramekins and add a slice of bread to each followed by cheese and broil in oven for a couple minutes or until the cheese boils
Enjoy immediately!
Notes
*Store leftovers in fridge but I recommend enjoying when you make! Or make soup ahead of time then add in bread and cheese before eating.
