The BEST Vegan Funfetti Sugar Cookies ever. Soft and chewy refined sugar-free sugar cookies made with all gluten-free and dairy-free ingredients.

Ingredients

Scale
  • 1 flax egg (or use 1 regular egg)
  • 1 cup coconut sugar 
  • 1/2 cup softened coconut oil (not liquid!!)
  • 1 teaspoon vanilla extract
  • 2 cups almond flour (I haven’t used another flour)
  • 1 tablespoon tapioca or arrowroot flour
  • 1.5 teaspoons baking powder
  • Sprinkles (I used these) + you can also frost them too after they bake

Instructions

  1. In a large bowl, mix together egg, sugar, oil and vanilla until smooth
  2. Mix in the flours and baking powder until fully combined
  3. Fold in sprinkles then add cookie dough to fridge for about 30 minutes
  4. While the cookie dough chills, preheat oven to 350 degrees and line a baking sheet with parchment paper and grease well
  5. Roll about 1-2 tablespoons of dough in your hand into a ball then add to tray and press down slightly. Repeat for remaining cookie dough
  6. Bake in oven for 10-12 minutes and allow the cookies to cool for a few and enjoy!

Notes

*Store leftovers in airtight container for 5 days or freezer for longer
