The Best Vegan Gluten-free Peach Cobbler made with just a few simple ingredients. This cobbler is insanely delicious, easy to make and is the ultimate healthy peach cobbler to pair with a scoop of ice cream.

Ingredients

Peach base:

  • 6 medium ripe peaches, sliced and pitted
  • 2 tablespoons melted coconut oil (or melted vegan or reg butter)
  • 1/2 cup coconut sugar

Cobbler topping:

  • 1 cup gluten-free oat flour
  • 1/2 cup coconut sugar
  • 1/3 cup finely chopped nuts (walnuts or pecans are best)
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 6 tablespoons melted coconut oil (or use vegan or reg butter)
  • 1/2 cup non-dairy milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400 degrees
  2. In a 10-12 inch baking skillet, toss the peaches, oil and sugar together and mix well
  3. Bake in oven for 15-18 minutes
  4. While the peaches bake, make the cobbler ingredients by mixing together flour, sugar, nuts, baking powder and cinnamon then add in oil, milk and vanilla until dough is formed
  5. Spread the cobbler dough across the skillet and bake for 20-22 minutes or until golden
  6. Serve with your favorite ice cream and enjoy!

Notes

*Store leftovers in fridge for 5 days. I reheat in microwave or oven
