The Most Epic French Onion Soup Pizza made with just 5 key ingredients for a delicious pizza twist on the classic soup recipe!

Ingredients

Scale
  • 1 large pizza crust of choice (I used the organic frozen gluten-free one)
  • 3 small sweet onions, sliced thinly
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon coconut sugar
  • 1 cup fresh mozzarella, sliced or shredded
  • 3/4 cup shredded gruyere cheese
  • Fresh thyme for garnish and red pepper flakes if desired

Instructions

  1. Warm oil over a large skillet and add onions and cook for about 3 minutes on medium-high
  2. Cover onions and simmer for 10 minutes (stirring every few minutes)
  3. Add in the sugar and mix again and cook for a couple more minutes or until the onions are caramelized to your liking
  4. Meanwhile preheat oven to 425 degrees and drizzle some oil on pizza crust
  5. Sprinkle the mozzarella across the crust then distribute the onions and sprinkle the gruyere on top followed by the thyme
  6. Bake in oven for 10 minutes or so then you can broil for a minute or two if you want the cheese to bubble/crisp a bit
  7. Slice and enjoy while warm!

Notes

*Store leftovers in fridge for 5 days. I love eating this cold or you can reheat in microwave or in a skillet on the stovetop
