  1. Using a mandoline, slice the English cucumber into thin, uniform pieces. The mandoline ensures precision and consistency, but if you don’t have one, a sharp knife works just as well.
  2. In a 1-quart lidded container (like a mason jar), add the sliced cucumbers, plain Greek yogurt, lemon juice, coconut aminos, toasted sesame oil, rice vinegar, minced garlic, and chopped green onions.
  3. Secure the lid tightly and shake the container vigorously for about 1 minute. This action ensures that all ingredients meld together, coating the cucumber slices evenly.
  4. After shaking, open the container and sprinkle the everything bagel seasoning over the salad. You can adjust the amount based on your preference.
  5. If you prefer a crunchier texture, serve the salad immediately. However, for a deeper infusion of flavors, let it marinate in the refrigerator for at least a couple of hours. This waiting period allows the cucumbers to absorb the marinade, enhancing the taste.
