These Triple Layer Chocolate Peanut Butter Oatmeal Bars are one of my favorite desserty snacks to make with gluten-free and vegan ingredients for an healthier easy and delicious sweet snack.

Ingredients

Oatmeal base:

  • 1 and 3/4 cup rolled oats (gluten-free if needed)
  • 1/2 cup coconut oil, melted and cooled
  • 1/3 cup coconut sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Line an 8×8 baking dish with parchment paper
  2. In large bowl, mix together the oatmeal, coconut oil, coconut sugar and vanilla until combined
  3. Press down into baking dish firmly and set aside
  4. In a microwave safe bowl add the peanut butter and chocolate chips and microwave for 30 seconds increments until melted, stirring in between
  5. Pour across the oatmeal base and spread with spatula
  6. Sprinkle granola on top then drizzle extra peanut butter if desired
  7. Add to freezer to set until firm (about 1 hour)
  8. Slice into bars and enjoy!

Notes

*Store in fridge for 1 week or freezer for 2 months
