These Tzatziki Marinated Chicken Pita Sandwiches are a delicious flavorful dinner recipe to make any night of the week. Made your own homemade tzatziki dressing to marinate the chicken in before cooking for the ultimate flavorful chicken recipe.

Tzatziki chicken:

  • 2 cups plain full-fat Greek yogurt
  • ½ large English cucumber peeled, grated, and squeezed very dry (plus chopped pieces to add in)
  • 1 lemon juiced
  • 12 cloves garlic grated or super finely chopped
  • 1 tablespoon chopped fresh dill plus more to taste
  • Kosher salt and freshly cracked black pepper to taste
  • 1.5 lbs boneless skinless chicken breasts, cut into 1 inch pieces

Pita sandwiches:

  • 4 Greek-style pita breads the thick, puffy pocket kind (or use a gluten-free bread/tortilla if needed)
  • ½ cup chopped tomatoes
  • ⅓ cup Kalamata olives roughly chopped
  • ½ cup pickled red onions
  • 2 tablespoon fresh dill chopped
  • 2 tablespoons cucumbers chopped

Instructions

Make the Tzatziki

  1. In a medium bowl, combine the Greek yogurt, grated and well-squeezed cucumber (this is key—too much water will thin the sauce), garlic, dill, and lemon juice. Stir everything together until smooth and creamy.
  2. Taste and adjust with more lemon juice if you like it extra bright. Season generously with salt and pepper.

Marinate chicken

  1. Transfer about 1 cup of the tzatziki to a large bowl and add your cubed chicken. Toss well to ensure every piece is coated.
  2. Cover and let it marinate for at least 1 hour. If you have more time, you can let it sit for up to 24 hours in the fridge—the longer it marinates, the more flavorful and tender it becomes.

Cook the chicken

  1. Heat a large skillet over medium heat. Add a drizzle of olive oil.
  2. Once hot, add the marinated chicken pieces in a single layer (you may need to do this in batches). Cook for about 3 minutes per side, or until golden on the outside and fully cooked through.

Assemble pita sandwiches

  1. Warm your pita breads slightly so they’re soft and easy to open.
  2. Fill each pita with the cooked tzatziki marinated chicken, then layer in chopped tomatoes, Kalamata olives, pickled red onions, fresh dill, extra chopped cucumber
  3. Finish with a generous drizzle of the remaining tzatziki sauce.
