Vegan Almond Butter Stir Fry Noodles (gluten-free)

These Vegan Almond Butter Stir Fry Noodles are one of the easiest meals to whip up for a healthy lunch or dinner that takes less then 15 minutes to make! Tossed in a dreamy almond butter sauce.

Ingredients

Stir fry:

  • 8 ounce noodles of choice (soba, whole wheat, egg,  gluten-free, anything!)
  • 12 tablespoons sesame oil (or olive or avocado oil)
  • 56 cups cut veggies of choice (I used frozen broccoli, carrots and peppers and onions!)

Stir fry sauce:

  • 4 tablespoons creamy almond butter (code RACHL for free shipping)
  • 1/4 cup coconut aminos
  • 2 tablespoon sesame oil (or use olive or avocado oil)
  • 1/2 teaspoon ground ginger
  • 2 tablespoons maple syrup (optional)
  • 2 tablespoons hot water

Instructions

  1. Cook the noodles per package but undercook about 3 minutes or so!
  2. Rinse in cold water and set aside
  3. In a large skillet add the oil and sauce the veggies for 5-7 minutes or until ready
  4. Mix together the sauce ingredients then toss together the noodles, veggie mixture and sauce together and enjoy!

Notes

*Store leftovers in fridge for 5 days

**Feel free to add your favorite protein too! I added chicken
