Vegan Chocolate Peanut Butter Oatmeal Bars

  1. Preheat your oven to 350 degrees
  2. Grease an 8×8 baking dish
  3. Combine oatmeal, oat flour, baking powder, cinnamon, vanilla extract and almond milk together and mix well
  4. In a separate bowl, add the maple syrup and peanut butter together (if peanut butter is hard, pop in microwave for about 15-20 seconds to soften)
  5. Add to dry ingredients and add coconut sugar
  6. Mix well until everything is combined
  7. Fold in peanuts and chocolate chips
  8. Bake for about 20 minutes
  9. Let the bars cool for about 20-30 minutes
  10. Melt chocolate chips in microwave (I added coconut oil too) in 15 second increments until melted
  11. Drizzle across the bars in the baking dish
  12. Cut & enjoy!
