Vegan Mint “Chocolate” Chip Smoothie

Sharing my favorite smoothie recipe, this healthy Mint Chocolate Chip Smoothie! Made with all vegan and gluten-free ingredients. A delicious smoothie twist on the classic ice cream flavor – with no ice cream!

Ingredients

Scale
  • 1 frozen banana
  • 1/2 avocado
  • Handful of baby spinach
  • A couple leaves of fresh mint (add more or less based off your preference!)
  • 1/2 cup full-fat coconut milk
  • Optional: cacao nibs crushed on top + the cream part on top of the coconut milk can

Instructions

  1. Add the banana, avocado, spinach, mint and milk to blender and blend until smooth and creamy
  2. Pour into glass of choice and top with coconut cream and cacao nibs if using and enjoy!

Notes

*You can double or triple the recipe too and keep it on hand in freezer. I also love making this into popsicles for Ezra! Just pour into popsicle molds and store in freezer.
