The absolute best Vegan Sugar Cookie Bars made with all gluten-free and nut-free ingredients and topped with vanilla frosting, sprinkles and tastes almost too good to be true for a “healthier” sugar cookie recipe.

Instructions

  1. Preheat oven to 350 degrees and grease an 8×8 baking dish and/or line with parchment paper
  2. In a large bowl, cream together butter, sugar, vanilla and milk until light and fluffy
  3. Add in flours and baking powder until fully combined
  4. Fold in sprinkles then press the dough into the baking dish and if you have time, let it sit in fridge for 10 minutes (it’s ok if not – I just think the bars stay together better if you pop in fridge before baking)
  5. Bake in oven for 18-22 minutes
  6. Allow the cookie bars to cool then ice and enjoy!

Notes

*Store leftovers in airtight continuer for 3 days or fridge for 5 days. Or add to freezer for 2 months
