Watermelon poke:

Poke bowl:

  • 1 cup rice, cooked per instructions
  • 1/2 cup edamame, cooked
  • 1/3 cup mango, chopped
  • 1 tablespoons jalapeƱos, sliced and seeds removed
  • 1/3 cup cucumber, sliced
  • Seaweed snack, sliced
  • Sesame seeds and chopped scallions to garnish

Instructions

  1. In a medium bowl add the watermelon
  2. In a small bowl, whisk together coconut aminos, sesame oil, rice vinegar and salt and pepper
  3. Pour on top of watermelon to mix well and allow the watermelon to marinate for about 10-15 minutes
  4. Assemble poke bowls by evenly distributing ingredients to 2 bowls and enjoy!

*You can store leftovers in the fridge for 2-3 days
