These 20-minute Healthy Burrito Bowls are a family favorite for quick and easy weeknight dinners. Plus they make for killer leftovers the next day and are gluten-free and dairy-free.

Ingredients

Scale
  • 1 tablespoon avocado oil
  • 1 small onion, sliced into thin strips
  • 2 bell peppers, sliced and seeds taken out
  • 1 lb ground meat of choice (beef, chicken or turkey all work great!)
  • 1/2 cup chunky salsa of choice
  • 2 cups cooked rice (basmati or brown work well or cauliflower rice for grain-free)
  • 1/2 cup black beans, rinsed and washed
  • For serving: chips, guacamole, cheese, cilantro or avocado slices and extra salsa!

Instructions

  1. Warm a large skillet with oil and add onion and peppers
  2. Cover and cook over medium heat for 5-7 minutes or until browned to your liking (I also like letting this sit and cook on low to really brown too if I have time)
  3. Remove peppers from pan and add in the meat
  4. Cook meat on medium heat and break into smaller pieces with wooden spoon or spatula
  5. Cook meat for 5-7 minutes until fully cooked then add in salsa and mix together
  6. Arrange burrito bowls by adding desired amount of mix-in’s in your bowl and enjoy!

Notes

*Leftovers stay good in fridge for 5 days. I recommend adding the cilantro, avocado or guacamole right before eating
