This 20-minute Healthy Veggie Rice Pilaf is our go-to side dish all the time. It is packed with vegetables, easy to make and is such a delicious way to spice things up from the boring old rice dish.

Yield: Serves 4

Ingredients

Scale
  • 1 garlic clove, minced
  • 1/2 large white onion, chopped
  • 4 ounces mushrooms, sliced (I used shiitake)
  • 1/2 cup frozen peas
  • 1 cup uncooked basmati rice
  • 2 cups broth of choice (I used vegetable broth)
  • Sea salt and black pepper to taste

Instructions

  1. Grease the bottom of a medium pot with oil (make sure the bottom is thinly covered)
  2. Turn stove on medium heat and add in the garlic and onion, mushrooms, peas and rice
  3. Toast over medium heat for 3-5 minutes, season with salt and pepper then add in the broth and bring to a low boil
  4. Cover and simmer for about 20 minutes or until rice is fully cooked
  5. Fluff the rice with a fork then serve with desired mains or eat as is
  6. I also love adding some fresh parm on top!
